If privacy is more important than ambiance then clear a space in your quarters and dance there. Someplace private, but that feels relaxed and personable. She might consider being alone with you in your quarters improprietous, however, so I'd stick to the deck if I were you, unless she's a particularly progressive and forward woman.
The basic steps are simple, stick to that and don't try anything fancy. And for heaven's sake, lead properly so she knows where you're going while you're dancing.
